Brunch Today: PB Banana Pancakes and Green Mimosas

Top of the morning, compatriots in butt kicking! It’s Sunday Funday! Despite Sunday’s new campaign for coolness, I’m just going to put this out there: Sunday’s sort of a fairweather friend, don’t you think? For 9-5ers like me, Monday is looming. For Saturday night party party party til 5ers (also like me), Sunday is spent shivering in  bed, avoiding loud noises and wishing some kind soul would bring you a falafel wrap and a chocolate chip cookie.

This should make er’body feel good:

Aw yeah. My go to (vegan! gluten free!) peanut butter banana pancakes are fried crispy on the outside, but dense and cakey on the inside. Let’s be real, I haven’t had a standard pancake in six years, and even I know that these are not Bisquick. But hot damn, they’re delicious!

Peanut flour is a staple of mine… I used it in my PB Beet smoothie here. It’s simply ground, de-fatted peanuts. It’s also crazy high in protein and makes everything taste like heaven. When I’m feeling extra organized, I buy it online. But because I’m usually sort of a hot, happy mess, I often end up buying PB2 at Whole Foods… added sugar, and a total rip if you ask me. But there you have it.

Peanut Butter Banana Pancakes

1/3 c peanut flour
2 T oat bran
2 T milled flax seeds
1 t vanilla
1/4 t cinnamon
dash salt
1/3 c (or more) liquid
1/2 banana
coconut oil for frying

pb (2)1. Mix dry, add wet, slice in banana and stir, stir, stir. You may need to add more liquid depending upon how your ingredients are feelin’… but be warned, this batter can go from zero to soup in no time. Add liquid until it has the consistency of thick icing. This is not a pourable batter. Once you get these suckers on the frying pan, you need to smoosh ‘em!

2. Flattened and ready for action! Below, they’re post flip… I like to spray a little extra coconut oil and grind a little bit more sea salt on the raw side… just because. I usually cook mine over low for about 2 minutes on either side, but watch these like a hungry hawk! As homely as they are, they’re a little temperamental.

3.While you’re fryin’ up your flapjacks, froth your coffee and prep your green juice… and make almond butter from scratch… You’re going to make this Funday your betch! And if you’re like me, every meal should be an elaborate production.

As for those mimosas… the formula’s pretty simple. Use whatever green juice you like… golden beet, mint, cucumber, basil juice or whatever you have on hand. Today I went with kale, lime, cucumber, green grape and celery. Pour into a champagne flute and duh… add champagne. That’s my answer to everything a la “put a bird on it.” Too wimpy for straight gin? Put champagne in it. Straight kale juice got you down? Put champagne in it. Just want to loosen up a little for 11 a.m. yoga?…
